Member Shares Homemade Granola Recipe

Linda hopes other Prevention Plan members will enjoy this cheap, healthy alternative to snacking on chips and cookies.

The idea for her recipe came when she and some friends were planning a camping trip. They wanted a portable and healthy snack that tasted good and would be easy to eat.
 
“Granola seemed to be the best option, but store-bought granola can get expensive. So, we decided to come up with an inexpensive recipe of our own,” Linda said.

Linda suggests eating this homemade granola with a high-fiber cereal to give your breakfast a little more taste. For a healthy snack, Linda also recommends trying it with low-fat vanilla yogurt or just simply eating a handful plain.
 
“I keep a container of it at my desk and my co-workers like to come by and grab a handful,” Linda said.

Linda enjoys making her homemade granola and hopes other Prevention Plan members will too. 

Granola Recipe

Ingredients:

  • 3 cups rolled oats
  • 1 cup chopped nuts (Linda recommends almonds or walnuts or a mixture of both)
  • ¾ cup shredded coconut
  • ½ cup raisins or dried cranberries
  • ¼ cup honey
  • ¼ cup oil (canola or vegetable)
  • 1/8 cup brown sugar
  • 1 teaspoon cinnamon
Cooking Instructions:
Preheat oven to 250˚. Combine oats, chopped nuts, shredded coconut, brown sugar, and cinnamon in one bowl. Mix honey and oil together and pour into bowl with other ingredients. Mix ingredients well and pour onto two sheet pans. Bake for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color. Remove from oven and let cool before mixing in raisins or dried cranberries.
